Have You Heard About Raw Food Yet?
Mounting evidence has shown that heat destroys many of the vitamins, phytonutrients, and enzymes found in raw, living food, rendering it harder to digest, nutritionally diminished, and toxic to the body. From Hollywood stars with personal chefs, to Manhattan's Raw restaurants featured in "Sex and the City," the Raw Food movement is sweeping the country as people gradually learn of the dramatic health benefits derived by eating a vegan diet in which food is never heated above 118 degrees Fahrenheit. Raw food is all about getting "the glow" — looking fantastic and living longer by preventing (and even reversing) disease, and feeling better than you've ever felt in your life.
Not Just Salads and Fruit Plates
If you've never been to a Raw restaurant, you probably have no concept of the totally distinctive culinary experience that awaits you. "Gourmet Raw" is an entirely new and exciting cuisine, in which fruits, vegetables, sprouts, seeds, and nuts are prepared in novel ways, often as much healthier versions of familiar cooked dishes that will blow your mind with their flavor, texture, and satisfying heartiness. Everything from pizza, to burritos, to burgers, to lasagna (pictured here), to fettuccini alfredo, to ice cream can be prepared using raw, 100% vegan foods. By eliminating animal-based foods, processed grains/sugars, and much of the trans-fatty acids from your diet, you dramatically reduce your risk (and in some cases can even reverse) cancer, heart disease, diabetes, high blood pressure, and daily annoyances ranging from allergies, to headaches, to bad skin, to irregularity, to low energy. When you remove toxicity from your internal environment, it's amazing what the body can do.
Best of all, with only a few exceptions, you can eat as much raw, whole food as you want without gaining weight. You won't feel hungry. You won't feel deprived.
Where Can I "Get the Glow"?
That depends on where you live. Dozens of trendy, Raw restaurants have popped up across the country, primarily in large, cosmopolitan cities. Some vegetarian and vegan restaurants also offer a few Raw selections, but generally speaking, awareness of Gourmet Raw Cuisine is still building and requires specialized knowledge that is not taught to classically trained chefs. Most chefs would be pressed if asked to prepare something with no animal products, let alone no heat!
Until a Raw restaurant opens near you, you're probably going to have to fend for yourself. In my classes and television segments, I've taught thousands of people just how EASY it is to go Raw. That's what this site is all about. Kristen's Raw is devoted to helping you eat the most healthy food possible. For the do-it-yourselfers, I've written a
